Add Oats: Add the quick oats to the mashed bananas and stir until well combined. The mixture should be thick and sticky.
Optional: Add Chocolate Chips: If desired, fold in the chocolate chips until evenly distributed throughout the dough.
Form Cookies: Scoop rounded tablespoons of the dough and drop them onto the prepared baking sheet, spacing them about 2 inches apart. Use your fingers or the back of a spoon to flatten and shape the cookies slightly.
